Archery Summit Tasting Room
Dayton, Oregon
Archery Summit’s 1,900 s.f. tasting room has several striking design features including slat wood ceilings and feature wall, fireplace with a stone chimney and ample biophilic elements. The tasting room, which was carefully stitched into Archery Summit’s existing facilities, has an operable storefront system and a large 42’ skylight that fills the space with natural light.
In addition to the tasting room, the project also included the design-build of a new fire suppression system that entailed the addition of a new tanks supplying water to the riser, constructing a new pump house and routing of fire suppression lines throughout the entire existing facility, including production areas, the existing tasting space and the fermentation halls.
R&H also completed extensive sitework, a sizable landscaping package, a new upper enclosure area and the renovation of existing space to include a large commercial prep kitchen as a part of our work for Archery Summit. All construction was completed while Archery Summit remained open and operational.

When selected to build Archery Summit’s new tasting room, it was communicated that the most important goal was keeping Archery Summit open and operational throughout construction. During construction, R&H took the following steps to ensure Archery Summit’s production remained un-impacted and the guests’ luxury experience was maintained:
- Planned fire suppression system installs around Archery Summit’s schedule and sequence of operations. This included working adjusted schedules to avoid spatial overlap with the winemaking team.
- Hosted a wine operations/fire suppression install meeting where we collaborated on a floor plan and large calendar to keep teams informed of each other’s activities.
- Installed dust barriers when possible to keep construction debris from production and tasting areas.
- Created and installed custom signage for guest navigation.
- Communicated daily with Archery Summit’s team regarding ongoing activities and events, discussing ways to avoid and/or minimize disruption.
